This is Dutch Zimmerman. In the early days of Castle Valley development, he did most of the water wells. Later he became very interested in wine making. Dutch and I, working with then Gov Norman H. Bangerter in 1986 was able to get the State Code changed to allow wineries in the State of Utah. We started a winery on Highway 191 and later sold and has become Castle Creek Winery at RedCliff Lodge. Dutch then started the Spanish Valley Winery which is still going strong.
